James' World 2

We bought a copy of Peter S. Beagle’s The Last Unicorn recently. The Rankin / Bass cartoon is one of the first movies I remember watching. Our five-year-old daughter was fascinated by the notion her parents were reading a book about unicorns. We have the cartoon, but I’m afraid it might be a little intense for her yet. Still, she has wanted me to read her excerpts and tell her about the story.

The following contains spoilers.

Daughter: Why is she the last unicorn?

Father: The others were kidnapped by a man named King Haggard.

Daughter: Why did he kidnap them?

Father: Well, he thought they would make him happy.

Daughter: Did they make him happy?

Father: For a while they did.

Daughter: But then they didn’t?

Father: Not really, no.

Daughter: Why?

Father: Well, he tried a lot of things to make him happy.

Daughter: And they didn’t?

Father:…

Perhaps one of the powerful foods in my culinary arsenal is also one of the most simple to make.  Pasta, vegetables, chicken and parmesan cheese are delicious enough on their own- but combined together, they create a magnificent melody of fantastic flavors.  Subtle hints of white wine, palette pleasing pasta, glorious garlic, tender chicken breast and some sensational sauteed veggies; Pasta Verde has everything you love in a dinner and more.  Serve it up fresh for a stupendous sunday meal.  Pack it up in some tupperware and bring to work or school for a luscious lunch.  Hot or cold, at home or on the go, the delectable deliciousness stays the same- superb.   This recipe for Pasta Verde has been in my family for nearly half a century and now it can be a part of yours too.  Buon appetito!

Ingredients-

– 2 to 2 1/2 pounds of chicken cutlets…

Kayden is home sick, again, today. He seems to be fever less, which is awesome! He also has a doctor’s appointment today. Chris is playing on his Facebook account and laughing a lot. Spencer, the Bionic Baby, is playing Minecraft (which I also call Minecrack as it is HIGHLY addictive) with Kayden. Spencer has a diaper, socks and his port access on at he moment. Not shirt, no pants.  The day is warm, but windy. It feels like spring, though I know that will be short lived.

Spencer has done really well with his port staying accessed this week, which is a great thing. It means fewer needle sticks for this session and I adore that. It isn’t that it hurts him. The Lidocane sees to the fact that he doesn’t feel it. It is just so traumatizing for him to see a needle coming at his chest. It is…

This video is too good and inspiring not to share. Tram Tran, Abbitt Wilkerson, and Zak Kerbelis of 1Kind made this video during the last round of Formula D at the Wall in New Jersey. The content, execution, and editing in this short film is top notch. Be sure to “like” 1Kind on Facebook and keep your eyes peeled for more videos from these gentlemen.
